Wine Making Yeast

What Does Wine Making Yeast Mean?

Yeast plays the crucial and imperative role in wine making. In oceans, yeasts dominate fungal multiplicity. Yeasts are tiny orgasms which reproduce asexually by budding. There are approximately 15,000 species of yeasts known till now. Wine making yeast helps in the production of wine. Without yeast, there is no possibility for the wine production as yeast does all the work, from the time of beginning.

Types of Yeast Use in Wine Making

There are many yeast species. For wine making, Saccharomyces cerevisiae is used. Saccharomyces cerevisiae is also used for baking, besides fermentation of alcoholic beverages. This has been seen throughout history that it is being used for fermenting of alcoholic beverages and for baking purposes. However, it is concluded that only 1% of yeasts has been identified and defined.

Nutritional Values of Wine Making Yeast

Yeast is a superb source of proteins and vitamins. It is a rich source of vitamin B-complex, where it produces positive and very healthy results. Its purposes are related with metabolism, including several essential minerals and important factors that are vital for the growth.

Naturally, yeasts are low in sodium and fat. Some of the yeasts are equipped with the most important vitamin, vitamin-B12. The nutritional yeasts have creamy, cheesy flavor, and it also taste like nuts.

Characteristics of Wine Making Yeast

Sugar that is present in grape juice is converted into alcohol or wine by the yeast. However, yeast is present all over the grapes invisibly even before pruning or fermentation. The single cell of Saccharomyces cerevisiae devours sugar in grape juice. Then it converts juice into carbon dioxide and almost equivalent amount of alcohol.

The endogenous yeast helps in fermentation, nevertheless it cannot give precise results as everything depends on the species of yeasts, including the quantity. The stifles of endogenous yeasts assures expected and consistent fermentation. The wine making yeast is the strains of Saccharomyces cerevisiae. However, different species have diverse fermentative and physiological properties.

When the fermentation crosses over 18%, just like human beings, yeasts get intoxicated and fall into a cataleptic mass. This case occurs due to the lack of nutrients and sugar. This is similar to human’s condition.

Wine making yeast can endure various climatic conditions and can survive a range of numerous temperatures. However, extremities can make yeasts perish depending on the climatic fluctuations.

Wine Faults

The term wine faults describe the carelessness or certain cataclysms, which occur during or before the fermentation. The wine making process involves good care, time investment, smartness, keen observation, efforts, and precise instructions. Always remember this!

Wine faults occur when some yeasts such as Brettanomyces and Zygosaccharomyces develop in wine. This unwanted growth of yeasts can result in consequent loss and wine faults. Brettanomyces is considered as a major contributor to wine damage or wine faults.
